Leckhampton Hill is a mixed fermentation beer infused with Elderflower and is a staple in the DEYA mixed fermentation programme. Each May, we sample our barrel stock in anticipation of the incredibly heady aroma that Elderflowers bring.
We choose barrels that show a moderate level of acidity and low oak character, blend these together and add Elderflower syrup we make ourselves from freshly picked flowers.
This year's vintage is showing fairly low acidity with the unmistakable evocative bouquet of these amazing flowers going from fresh sweet floral aroma to some rustic herbal qualities, followed by a lean slightly off dry finish.
