Our beautiful mixed fermentation beers are made by carefully blending barrel aged beer allowing us to create complexity and harmony in each bottle. Aged in French oak barrels, the beer picks up vanilla and sweet spice notes, along with tannins that provide structure and a subtle drying sensation.
We often add fruit, either foraged or from local producers, during refermentation which adds bold, ripe flavors that complement the oak.
Connection to our surroundings and heritage is important to us. These fruited mixed fermentation beers are named after hills and landmarks local to Cheltenham, such as May Hill, Leckhampton Hill, Coopers Hill, and Belas Knap.
Sometimes the names relate to the origin of the fruit, sometimes to pay homage to the land.
